Sensory Specific Satiation: Linking product properties to obesity prevention (07438)

Omschrijving van het onderzoek

More than 40% of the adult population in the western society is overweight. Overweight is caused by an increased energy intake compared to energy expenditure. Overweight and obese subjects do not eat more often, but they eat more during a meal. Because of a slower satiating capacity, meal termination is delayed. This project has as aim to understand the biological mechanisms behind this delayed satiating capacity and to determine how food properties can cause accelerated meal termination. Two PhD-fellows work on the biological mechanisms that influence meal termination, and two PhD-fellows focus on the technological processes that may affect sensory satiety. A fifth PhD fellows works on the intergration of technological processes and biological mechanisms through statistical modeling techniques.
This knowledge will enable the food industry to improve existing products and develop new foods with optimal satiety properties, without loss of pleasantness of taste, in order to contribute to the prevention of obesity.
